WHO ( 1999) grouping region pursuant to nutrition prevalensi less into 4 group that is is: low (under 10%), middle ( 10-19 %), high ( 20-29%), very high (> 30%).

To lessen depend on other state and prevent the happening of ugly nutrition which can cause generation loss, needed the existence of diversified staple food with side dish input which can in the form of extract modified/ flour. Besides also need food product increase effort by developing and exploiting variety involve is existing.

Indonesia as one of variety center involve world, owning many food crop which can be developed and exploited more optimal. Between parsnips which have potency as source of carbohydrate. Competent Parsnips to be developed upon which food is kimpul ( Sagittifolium Xanthosoma ( L.)Schott), Garut ( arundinacea maranta), Parsnip Ganyong ( Canna Edulis) and Parsnip Jalar ( Ipomea Batatas L.Sin).

Compared to paddy, that parsnips conducting far easier and is cheap. For example, planting wood corm intensively require expense only one-third from expense of paddy conducting. On the other side, equivalent parsnips carbohydrate content also with rice.

That Parsnips later;then can be processed to become flour / extract modified. In the form of flour, parsnips earn difortifikasi by various wanted nutrition Iihat vitamin. Flour form also water down and depository memperlama till can hold up berbulan-bulan, even annual till. Besides, in the form of flour will water down consumer process it become various food type ready to saji and accomodating it with appetite took a fancy to.

This problems can be replied developed of technology making of flour / extract modified by protein containing konsentrat especially by using local raw material. the Local raw material in the form of parsnips like jalar corm, ganyong corm, garut and or kimpul, what less exploited and developed its usefulness in Indonesia. Modify extract by enzimatik represent one of the technique modify extract giving advantage among others: condition of its process is not extreme ( mild ), friendly environment, yielded product represent natural product, and enzyme can be used is recuring. Principle Making of extract modified and protein containing konsentrat by enzimatik is resolving of extract some of by enzyme become more simple component ( mono- and di- sakarida and also oligosakarida). Hereinafter dissolve simple component of water cleaned so that protein concentration in extract modified will mount.

Intention of this writing is ( a). To know food materials alternative which can using society cheaply and protein containing konsentrat ( b). To know is important useful of local parsnips to making extract modified which protein containing konsentrat by enzimatis and ( c). To study applying extract modified protein containing konsentrat by enzimatis base on local parsnips as food materials alternative effort.
